To Praline meant to preserve, usually coated in caramelized sugar, the word praline now has different connotations, classic praline is blended sugar coated nuts, while in the chocolate box it’s usually a chocolate filled with a nut and chocolate combination, while in Belgium all filled chocolates are known as pralines. We will be exploring the whole process working with almonds and hazelnuts, learning different techniques to create different flavours before creating our own perfect praline filled chocolate. 


This workshop can be enjoyed on its own or as part of a series of classes. Previous knowledge will not be necessary so it's a perfect introduction to the mechanics of working with chocolate, especially for any for any cake maker that wants to understand more about how chocolate works.

During the workshop you will:

  • Learn basic sugar boiling techniques to be able to make classic caramel
  • Learn how to combine caramel with different nuts to create a classic praline base
  • You will work with tempered chocolates to mould and create your filled chocolate pralines
  • By the end of this workshop you will be able to effectively boil sugar to create your desired consistency.
  • You will make a variety of praline flavours to create your filled chocolates for you to take home.
  • You will beautifully wrap your creations to take home and enjoy
  • Go home with recipes and your newly found chocolate knowledge

What do you take away with you?

Each participant will take home approximately 400g of your own chocolate as well as the recipes and technical worksheets to be able to make your own and perfect your skills at home.

Perfect for chocolate lovers of all ages and abilities who want to learn more of the secrets to create their own gorgeous chocolates at home. This course is also ideal for chefs and catering students to learn how to work with fine quality chocolate in a range of environments and purposes.
Please note that children are most welcome at this workshop, however we do ask that they are accompanied by a full paying adult participant
