Chocolate Making Process

Once we have our cocoa nibs the chocolate making process is made of 3 main stages:

REFINE
The cocoa nibs are refined to release their cocoa butter and make the particles too small to detect.

MIX
The ingredients are mixed together to evenly distribute flavour, coating every particle in cocoa butter so they blend together consistently.

CONCH
The chocolate agitates gently for the final conching process, removing unwanted volatiles to develop a harmonious flavour.
