Inside each cocoa pod the beans surrounded by fruit made sweet by the sun and juicy by the rain.
Cocoa farmers ferment the beans by leaving them to steep in the sweet juices that develop into vinegar and acetic acids.
As cocoa farms are often located in remote rural environments and the trees produce fruit all-year round it is often necessary for farmers to work together in co-operatives.
The beans are then dried ready for shipping.
