Made from our own bean-to-bar chocolate, our couverture shards are designed for chocolatiers, pastry chefs, home bakers, and anyone who wants to work with exceptional chocolate — in a format that's as beautiful as it is practical.
What Are Couverture Shards?
Couverture is professional-grade chocolate with a higher cocoa butter content than standard eating chocolate — typically between 31 and 38% — which makes it more fluid when melted and gives a thinner, glossier finish when used for enrobing, moulding, or coating. It is the chocolate of choice for chocolatiers and pastry professionals worldwide.
Our couverture shards take that professional-grade chocolate and present it in a form that's easy to work with at any scale: irregular, hand-broken pieces that melt evenly, temper beautifully, and carry the full flavour character of the origin they're made from. They are, in short, the best chocolate we make — in the most versatile format we've ever offered.
What Makes Ours Different
Most couverture on the market is made by large manufacturers from blended, commodity cacao. Ours is made in our manufactory on Tanners Moat, from cacao we've sourced directly from farms we know — including our Solomon Islands origin from Agnes Pilopaso's Tupughotua Plantation, and our Kampura Guatemala heirloom cacao, won at the Cacao of Excellence Ed Seguine Auction at Chocoa in February 2026.
That provenance comes through in the flavour. When you temper our couverture and taste the result, you are tasting a specific place, a specific harvest, a specific set of decisions made by a farmer on the other side of the world. That is not something any commodity couverture can offer.
How to Use Them
Our couverture shards are suitable for the full range of chocolate work:
- Tempering — for enrobing truffles, dipping biscuits, or moulding bars and figures
- Ganache making — the higher cocoa butter content gives a smoother, more fluid ganache
- Baking — melted into brownies, cakes, and tarts, or scattered as chunks for a more intense chocolate hit
- Hot chocolate — shaved or melted directly into hot milk for a drinking chocolate of extraordinary quality
- Decoration — the shards themselves are beautiful as a garnish or decoration on finished desserts and cakes
